Hash Brown Casserole- Thanks Mom!

My Mom's Hash Brown Casserole
2 lb bag of frozen hashbrowns (thawed)
8 oz. of sour cream
1 tsp salt
1 stick of melted butter
1 can cream of chicken soup
1/2 onion (or you could buy a bag of hash browns with peppers and onions already included)
10 oz. package of grated mild cheddar cheese
crunchy topping- bbq lays chips, harvest cheddar sun chips, breadcrumbs, or really whatever :)

* Grease your casserole dish and preheat oven to 350
* Mix hash browns, sour cream, soup, salt, butter and chopped onion in a large bowl
* Add the grated cheese to the mixture and pat into the casserole dish
* Crumble the chips (or topping of choice) over the top of the casserole
* Bake covered for 45 minutes... remove foil and bake until topping starts to brown (approx. 10 mins.)

* It seems like each time I make it the baking time is different, so after about 40 minutes, check on it often until the topping starts to brown.  Also, the pictures above and below were before baking... everyone ate it so quickly I couldn't snap an "after" picture :)
